Can Mayonnaise Make Your Dreams Come True?
Good afternoon, Chics! We have been busy over the last few weeks with so many projects. I don't know about you, but this is my favorite time of year. It's full of hope and promise.
Our chickens have decided it is springtime and are laying very well. We are consistently collecting between 28 and 37 chicken eggs per day! And the ducks are also on a roll with five eggs a day. One of our ducks is building a nest so she'll soon be in there sitting on eggs, and we'll have ducklings.
I have the incubator going with 33 eggs that should hatch March 10-11. We will get the brooder going early next week for the chicks to live in until they go to their forever homes. Have I said that I love this time of year?
On Saturday, I boiled 70 chicken eggs and 8 duck eggs. The duck eggs went into a pound cake. It was delicious. I devilled 20 eggs (there were four left this morning) and left the rest to deal with today. My son had some of the eggs over the weekend. I'm not really sure how many I peeled this morning, but that all went into egg salad.
I ran out of mayonnaise on Saturday, so this morning I made some. I'll share the recipe link below. I grabbed 4 duck eggs and got to work. I took a picture of the ingredients and equipment I used before I began. That picture was dropped into a post on my Facebook page, but I almost didn't post it. Why? Because I wasn't using homemade mustard, and I didn't want to deal with comments about using Walmart brand mustard. I ended up posting it and then got busy making mayo.Partway through making mayo, my brain switched over to my blog, and an idea was born. How many people out there are looking for ways to eat healthier food? How many people think homesteading is out of reach for them because they live in an apartment? Guess what? We all started somewhere. So, I thought I would talk to you about starting where you are.
If you want to eat healthier, make mayonnaise. You very likely have the ingredients to do so: 1 egg, mustard, salt, lemon juice, vinegar, and oil. That's it. You will need a way to mix it, and I suggest an immersion blender. If you don't have one, I guarantee someone out there has a solution. And don't worry like I did about using Walmart brand mustard (for instance) because even using that, your mayo will be healthier than the jar you can buy at Walmart. And it's cheap to make.
Do you dream of one day owning a home and a few chickens? Maybe you dream of your own little
space to grow a garden and some fruit trees. It can all feel very out of reach, but you have to start where you are. Make mayonnaise. You control the ingredients, and it isn't cost prohibitive. While you emulsify the mayo, you can dream of what you would plant together, and whether or not you want to have roosters to fertilize your eggs.
A very limited number of people just fall into homesteading without having to start from the beginning. I would encourage you to write down your dreams and then build goals to get yourself there. Baby steps will get you where you are going faster than giant steps all the way. Social media is full of people sharing ideas and techniques, so search out blogs or pages that inspire you and follow them. Get involved. Buy a notebook that is dedicated to your homesteading or healthy eating dreams. Write things down. One day, you will look back and be pleased with how far you have come.
